A bright and milky cheese with a sticky cider-washed rind, giving way to a silky and yielding centre
Yarlington made from the milk of organic Fresian and Shorthorn cows and is the result of a collaboration between cheesemaker David Jowett, cider maker Tom Oliver and cellarman Sam Wilkin. The rind is gently washed four times in a brine solution and then twice in a combination of brine & Tom’s Yarlington Mill bittersweet wild fermented cider. The cider itself has been matured for 18 months in Speyside whisky oak barrels bringing a striking complexity to this unique cheese.
Yarlington is named after Yarlington Mill in Somerset, home of the Yarlington Mill apple, now one of the cornerstones of British Cider making.
