Wigmore was developed in the early 1990s in collaboration with Neal's Yard Dairy and has since gone on to win numerous awards including on a global stage.
This semi soft cheese is created using a "washed-curd" technique – where some of the whey is replaced with water – which reduces the acidity and results in flavours that range from mild and milky to meaty and nutty depending on age. The soft creamy paste beneath the rind gives way to a chalky, semi-firm centre.
Available in (approx) 250g, 500g, 750g portions (from a 3kg wheel). Freshly cut & wrapped to order.
