Made by the village co-operative from raw cow's milk, right in the heart of Val Taleggio, the valley from which it takes it's name. A firm and fruity paste encased in an orange rind full of nutty notes, Taleggio is primarily used in Italian cooking for it's flavour and superior melt qualities.
