Although known for its strong smell and distinctive rind, the paste of Stinking Bishop actually has a creamy, smooth and subtle flavour. The "Stinking Bishop" name comes from the variety of pear, also known as the Moorcroft pear, used to make the Perry that the cheese is washed in during maturation.
