A new British classic made from the organic milk of Fresian & Shorthorn cows. The rind which has a meaty, savoury flavour, is washed in a brine solution which helps develop the bright terracotta colour. While the bouncy, buttery paste beneath has aromas of warm milk, hay and hints of hazelnut.
Ashcombe’s distinctive line of wood ash centre of the cheese is now a familiar sight on most cheeseboards, despite being only a relatively recent creation. Conceived of over Easter lunch in 2020 in response to the impact of Covid restrictions on the market, the clever people at King Stone Dairy developed this larger, longer aging to weather the storm, naming it after the “coombes”, the steep sided valleys of the surrounding Cotswold landscape.
