The flavours of Coolea are sweet and rich, with hints of caramel, butterscotch and honey. Smooth and close textured, it is reminiscent of Dutch Gouda

Hailing from the lush hills of Macroom in County Cork, Coolea is a traditional farmhouse cheese made by the Willems family using cow’s milk from the local pastures. Matured slowly to develop its signature golden hue and deep, toffee-like sweetness, this cheese offers a buttery texture that softens with warmth. Its smooth paste and balanced nutty tones make it perfect for pairing with apples, dark ales, or a drizzle of honey.
