This distinctive turret-shaped goat’s cheese is bright and lemony with a moose-like texture
Dorstone is a delicate, ash-coated semi-soft goat’s cheese with a light, fluffy texture and bright, citrusy flavours. As it matures, it becomes more mellow and yet more complex, with notes of fresh hay and even a yohurty taste. The edible rind is formed of a mix of grey and green due to vegetable ash and wild moulds and a wrinkled or “brainy” appearance created by Geotrichum candidum fungus.
