A traditional Dale-style cheese, similar to Wensleydale, with a semi-hard, crumbly texture and flavours ranging from fresh and lactic to smooth and custardy.
Made in Teesdale, just across the river from the village that gives it it’s name, Cotherstone is generally eaten as a fresh, unripened cheese. However, at Neal’s Yard maturing rooms in Bermondsey, they mature the cheese for a further 4 weeks, producing a harder rind which allows the texture to soften and the flavours to deepen.
Available in 250g, 500g, 750g portions. Freshly cut and wrapped to order.
