Brefu Bach or "Little Bleat" is a superb, delicate cheese made using milk from heritage breed sheep and rennet derived from thistle extract. A superbly creamy, delicate, lactic set with fruity, earthy flavours, this fantastic little seasonal cheese really stands out.
