Bibury is a new cheese introduced in 2024, styled after the smooth Pyrenean cheese Ossau Iraty. Made from sheep’s milk supplied by nearby Sheaf House Farm—who purchased their flock from Ram Hall, where Berkswell was made until 2023—Bibury carries on a strong local tradition.
The sheep are milked seasonally, from March through October, with the first cheeses ready by midsummer. The last of the autumn cheeses are typically sold toward the end of winter.
Flavours vary throughout the year, but you can expect a rich and sweet profile, with nutty aromas and a fondant-like texture. The rind is washed early in the process, giving it a distinctive light grey coverage.
Available in (approx.) 250g, 500g, 750g portions. Freshly cut & wrapped to order.
