Cashel Blue is an award-winning farmhouse cheese made by the Grubb family at Beechmount Farm in County Tipperary, Ireland. Crafted from pasteurised cow’s milk, it matures for a minimum of 8 weeks to develop its signature balanced flavour. The cheese has a rich, creamy body threaded with blue veining that deepens in character as it ages. Mild and buttery when young, it becomes more robust and piquant over time, offering a satisfying depth without overwhelming sharpness.
Available in (approx) 250g, 500g, 750g portions. Freshly cut & wrapped to order.
