Made exclusively for Neal's Yard Dairy by Cropwell Bishop creamery, this Shropshire blue is made with animal rennet using pasteurised cow's milk, annatto and penicilium roqueforti. It has a slightly peppery flavour and a creamy texture and less piercing produces less blue veining and a more complex flavour.
